I LOVE refried black beans but there are two things I hate about them:

1. They are not always easy to find.

2. You can only buy them in a can.

So.  I decided to seek recipes and make my own.  This is what I came up with:

Ingredients you need:

2 lbs. dry black beans

1 onion

1 jalapeno

1 head of garlic

salt to taste (do not salt until beans are soft/mushed)  The salt could slow down the cooking process.

 

Step 1: Soak the dry beans in a pan of water overnight or 12-24 hours

Step 2: chop finely or puree onion, jalapeno and garlic

Step 3: place soaked beans (leave some of the water), onion, jalapeno and garlic into crock pot.  You can always add water later if needed so no worries if you don’t think there is enough.

Step 4: cook on low for 6-8 hours or high for 4-5 hours

Step 5: mush all together

That’s pretty much it.  I’ve got enough beans to last me a few months.  Ha!  I will definitely have to freeze some!

I have to say that there are a few things I would change next time; they are certainly tasty but I would prefer more flavor.  I would add more onion, more jalapeno and more garlic.  Also there are other methods than using the crock pot.  I’m wondering if that would make more spicy flavors come through better.  I will try that next time.  Either way.  I highly recommend making your own, it’s definitely cleaner eating and will save you money too!
